As for the Big-8 allergic consumers may accidentally eat these foods as they may be "hidden" in processed foods in the form of wheat flour substitutes (e.g. buckwheat), culinary oil (sesame oil) or spices (celery, mustard). Labeling of these allergenic foods is not mandatory in the United States, but is required according to European (celery, lupin, molluscan shellfish, mustard, and sesame), Canadian (sesame), Japanese (buckwheat, squid) and Australian / New Zealand (sesame) regulations.
